Green tea is made from unfermented leaves - the drying process is carried out immediately after picking. In the case of the best Chinese teas, this stage follows the traditional method. It involves drying tea leaves on bamboo trays for an hour and then placing them on heated pots, where they quickly lose their natural moisture. Thanks to such a quick process, green tea retains more valuable ingredients than black tea or oolong, has a delicate taste, subtle aroma and specific bitterness.
