Cane molasses, called black gold, is produced as a by-product in the cane sugar production process. It has the consistency of syrup.

Depending on the raw material from which it is made, it is distinguished:

– beet molasses, obtained during the production of beet sugar;

– cane molasses, obtained during the production of cane sugar;

– date molasses – date syrup;

– agave molasses – cactus syrup.

Molasses contains about 20% water, and cane molasses, generally considered better, has about 38% sucrose.

Molasses contains:

• valuable vitamins and minerals.
• non-heme iron (more difficult to absorb; iron absorption in the digestive tract is facilitated by vitamin C, amino acids such as lysine or histidine and low pH of gastric juice)
• magnesium, potassium, calcium, sodium, copper, phosphorus, chromium, zinc and B vitamins – B1, B2, B3 (niacin), B6 ​​and folic acid.

A teaspoon of molasses has 20 kcal and zero grams of fat. It can successfully replace white sugar and even honey or sweetener. (1/2 cup of molasses equals 1 cup of sugar).
