Sugarcane molasses is a thick, dark syrup , which is produced as a by-product during the production of sugar from sugar cane. It has a long and fascinating history, which is closely related to the history of sugar cane cultivation and sugar production.
The origins of sugar cane cultivation date back to ancient times. Sugar cane is believed to have originated in New Guinea and was spread by people wandering through Southeast Asia, India, and then the Middle East. Arabs played a key role in spreading sugar cane cultivation throughout the Mediterranean, especially in Sicily and southern Spain, already in the Middle Ages. Europeans first encountered cane sugar through the Crusades and trade with Arab countries. Interest in sugar grew rapidly in Europe, but it was not until Columbus' discovery of the Americas in 1492 and subsequent colonization that mass production of cane sugar was possible. Thanks to ideal climatic conditions, this took place especially in the Caribbean and other parts of the New World.
Molasses is produced in the process of sugar refining, in which sugar cane juices are boiled, to crystallize the sugar. What remains after sugar extraction is a thick, dark syrup rich in unrefined sugars and various minerals and vitamins, which makes molasses considered not only a culinary product, but also an ingredient with valuable nutritional parameters. Molasses has also had other uses throughout history. It was used as a sweetener, in the production of rum, and as an ingredient in animal feed. In the 18th and 19th centuries, it became an important trade product, especially in the context of the triangular trade between Europe, Africa and the Americas. Today, sugar cane molasses is valued for its unique taste and nutritional properties, being used in cuisines all over the world, from sweeteners in breads and desserts, to ingredients in sauces and marinades.
